Today’s recipe is tiramisu, a dessert that everyone loves, especially my dad and I think that this year I will prepare it for Father’s Day, which is next Monday.
Since I started using the pasteurized mascarpone cream, I surely prepare it more serenely, it might be only my paranoia, but desserts with raw eggs have always left me with some doubts.
On the blog in fact I had already published the recipe to prepare the white tiramisu (the one made of only egg whites) and also another couple of recipes that taste almost like tiramisu, I was just missing the recipe to prepare it in a pasteurized version- that is cooking the eggs.
Next time I will try to prepare a vegan version.

Thermomix Tiramisù with eggs pasteurize
Ingredients
- 3 eggs
- 6 tbsp sugar
- 500 gr mascarpone cheese (cold)
- 200 gr savoiardi biscuits
- 250 ml coffee
- cocoa powder
Instructions

Prepare the mascarpone cream as in the recipe.

Meanwhile, prepare the coffee with the moka, let it cool and pour it into a large bowl.

Slightly soak the whole cookies and place them on a baking tray of the shape you like.

Now spread a layer of cream over the ladyfingers and make another layer of ladyfingers soaked in coffee and another layer of cream.

Sprinkle bitter cocoa over the entire top layer of the tiramisu.

Refrigerate for at least 2-3 hours before serving... Buon appetito!
Recipe Notes
For lactose intolerants it is possible to replace classic mascarpone with lactose-free mascarpone.
For gluten intolerants, replace classic cookies with gluten-free ones.
